Katie Nelson, RDN, LD is a 2015 graduate of the Nutrition/Dietetics program at the College of Saint Benedict. After graduating from CSB, she completed her Dietetic Internship at Missouri State University in Springfield, MO where she focused on Rural Health. Upon completion of her internship, Katie passed a national Registration Exam to become a Registered Dietitian Nutritionist. Prior to returning to CSB, she worked in Clinical Dietetics for a health care system in the Twin Cities. Katie is passionate about wellness and helping people make lasting lifestyle changes. Katie has an “all foods fit” philosophy and encourages occasional indulgences while maintaining a healthy diet that focuses on vegetables, fruits, lean protein, as well as healthy carbohydrates and fats. She joined the CSB Dining Services team as the Registered Dietitian in September 2017 and is very excited to provide education to promote healthy diet and lifestyle choices.
